High-Protein Desserts (3 Vegan, Gluten-Free Recipes)

I’ll be honest with you guys: I have a serious sweet tooth. I’ve been this way my entire life, and even though I still like to treat my inner child to ice cream and cupcakes sometimes, day-to-day I try to keep it healthier. So I have a handful of yummy, high-protein desserts that I keep on rotation to ensure my sweet tooth is satisfied while also being super nourishing, refined sugar-free, and of course, vegan.

When I make healthy desserts at home, I like to make sure they are:

  • Refined-sugar free
  • Gluten-free
  • Have a plant-based protein source
  • Vegan (duh)!

While I’m not a “protein-maxxer” by any means (studies show time and time again that the average American lacks fiber, not protein), I do try to maintain a balanced diet that is plant protein-rich, in addition to consuming heaps of fiber and moderate amounts of healthy fats.

And so I’m mega excited to share with you guys a few of my favorite high-protein desserts that are equal parts nutritionally balanced as they are delicious and ultra satisfying. So today I’m sharing three of my favorite healthy, vegan, gluten-free dessert recipes that just happen to be high-protein, too:

  • “Mochi” Ice Cream
  • Sugar Cookie Bark
  • Chocolate Maca Mousse

I wanted to share a fruity option, a vanilla option, and a chocolate option to make sure we had a high-protein dessert for every palette (I tend to favor fruity or vanilla, but I have to tell you – this vegan chocolate maca mousse is out of control).

Ok, let’s get into my favorite high-protein dessert recipes.

All require less than 10 minutes of prep!

Vegan Mochi Ice Cream

These delicious vegan mochi ice cream balls are incredibly satisfying for even the sweetest of sweet tooths (sweet teeth)? but they are also super healthy, high protein, refined sugar free and gluten free. One serving (two mochi bites) gets you 15 grams of protein using Sprout Living Epic Protein, alone. If you use a protein yogurt like I did, you'll get closer to 20g protein.

Ingredients

  • 4 spring roll wrappers

  • 3/4 cup sliced strawberries (mango is great here too)

  • 3 scoops Sprout Living Epic Protein Pro-Collagen flavor (Vanilla Lucuma is also great in these)

  • 1 cup plant-based yogurt (I used Forager's greek yogurt)

Directions

  • Dip one spring roll wrapper in a shallow bowl for about 1 minute or until it has a soft, gummy texture.
  • Mix the three scoops of Sprout Living Epic Protein into 1 cup of plant-based yogurt.
  • Lay the wrapper on a flat surface and place about three spoonfuls of the yogurt mixture on top of it. Then place a few strawberry slices on top of the yogurt (about 5).
  • Fold the top of the wrapper towards you, then each side, finishing with the side closest to you, ensuring there are no gaps so the yogurt doesn't seep out. Re-shape as you wish (they can be round or rectangular, either way they'll be delicious).
  • Repeat this step with three more wrappers (this recipe yields 4 mochi balls, but feel free to double or triple it)!
  • Place the mochi balls in the freezer for about twenty minutes (you don't want them to get too frozen) and enjoy! The outside should be cold but not hard, and still gummy to give it that mochi texture.

Notes

  • Optional: on top of the strawberries you can add a drizzle of almond or peanut butter, or coconut flakes, chocolate chips...whatever your heart desires!

Sugar Cookie Bark

This sugar cookie bark is great for kids and grown ups, alike, and has a hidden protein boost thanks to Sprout Living Epic Protein. Each serving will get you about 10 grams of protein.

Ingredients

  • 1 1/2 cups almond flour

  • 1/4 cup maple syrup for the crust, plus another 2 tbsp. for the "frosting"

  • 1/4 cup coconut oil, melted

  • 1/2 tsp almond extract (optional)

  • 1 cup cup plant-based yogurt (I used Forager Greek)

  • 3 scoops Sprout Living Epic Protein Vanilla Lucuma

  • dye-free sprinkles

Directions

  • Mix the almond flour, coconut oil, maple syrup, and almond extract thoroughly (if using) in a large bowl.
  • Cover a baking sheet with parchment paper, then spoon the mixture on top and flatten it with your hands. It should be about 1/4-1/2 inch thick.
  • Mix together the yogurt and maple syrup and spread it over the cookie bark. Add as many sprinkles as you'd like 🙂
  • Freeze for at least one hour or overnight. Break apart and enjoy! The bark keeps in the freezer for up to one month.

Chocolate Maca Mousse

Ingredients

  • 1 package silken tofu (usually about 14 oz.)

  • 2 oz dairy-free dark chocolate (70%), melted

  • 4 scoops Sprout Living Epic Protein, Chocolate Maca flavor

  • Pinch flaky sea salt (optional)

  • 2 tbsp maple syrup

Directions

  • Melt the chocolate in a saucepan over low heat on the stove, stirring frequently, until completely melted. You can also melt it in the microwave. Set aside and allow to cool to room temperature.
  • Add the silken tofu, cooled chocolate, and maple syrup in a blender or food processor and blend until smooth (there should be no lumps).
  • Transfer the mousse into individual small dessert bowls or a tupperware and allow to cool for at least 1 hour.
  • Serve and enjoy! You can add fun toppings like berries, cinnamon, chocolate shavings, coconut flakes, or vegan whipped cream.
