I had the chance to try out some of their latest meal kits (and a couple of ready-to-eat meals) on their menu and wanted to give readers an updated Purple Carrot review so you can get a glimpse into the food they have on offer.

Roasted Sweet Potato and Lentil Bowls with a Chipotle Crema and Citrus Salad

This one was my favorite – so delicious, satiating, and easy. I’ve already re-made it one week later because it was that good!

Kung Pao Cauliflower with Cucumber Salad and Quinoa-Speckled Rice

This was also really tasty and a fun one to make – I love an Asian bowl and Purple Carrot always has a ton of these types of meals on rotation.

Hearty Tomato and Rice Soup with Tofu Nuggets

Such a creative idea to make croutons out of tofu -I’ll definitely be using that trick again. This soup was super tasty and wholesome, and I loved the vegan parmesan and fresh parsley that came with it.

This one was pretty good, but I am super picky with faux meats and the mouthfeel of this one wasn’t my favorite. That said, I shared this with a friend and he liked it a lot – so it may have just been a me thing!
