Easy Vegan Berry Crisp

Whenever someone asks me for a healthy, easy, crowd-pleasing dessert recipe I immediately direct them to my vegan berry crisp! It’s the perfect dish to bring to a summer barbeque or winter gathering – it’s delicious served hot or old, on its own or à la mode.

The salty-sweet cinnamon flavors and crumbly texture of the topping, paired with the tart, natural flavors of the berries and their soft, cooked-down consistency is just so pleasing to the palette. I’m drooling as I type this and stare at the photos…probably going to go for serving numero dos.

Now, for the real question: is it a berry crisp, a berry crumble, or a berry cobbler?

Whatever you call it, it’s the MVP of desserts, if you ask me.

Vegan Berry Crisp

For the purposes of this post, we’ll go with crisp. But really, it’s such a fantastic recipe that’s sneakily quite healthy. If you’re aiming for a cleaner dessert, I usually make mine without refined sugar and gluten. I use a small amount of coconut sugar for the crumble, and Bob’s Red Mill Gluten Free 1:1 flour, which I buy from Thrive Market. I just love a dish that allows for the natural sweetness of the fruit do the talking, and this recipe really accomplishes that. But if you’re good with normal cane sugar and flour, those can easily be used as well – dealer’s choice!

Psst: it takes less than 10 minutes to prep, but it’s so good but no one will ever know how easy it is 🙂 Pro-tip: serve the berry crisp with some vegan vanilla ice cream to really knock their socks off.

Ingredients

  • Crumble Topping
  • 1/3 cup gluten free or regular flour (I use Bob’s Red Mill 1:1 gluten-free)

  • 1/3 cup oats (I use rolled oats)

  • 1/4 cup coconut sugar or brown sugar (I prefer coconut)

  • 1 tsp cinnamon

  • 1 pinch salt

  • 1/4 cup melted coconut oil or plant-based butter

  • Berry Base
  • 2.5 cups berries (can be a mix, or just one type) – fresh or frozen strawberries, blueberries, raspberries, and/or blackberries

  • 1 tbsp lemon juice (about 1/2 of a small-medium lemon)

  • 1 tbsp corn starch

Directions

  • Preheat oven to 375° degrees. Prepare the crumble topping. Combine all dry ingredients thoroughly in a medium bowl (flour, oats, coconut or regular brown sugar, cinnamon, salt) then pour melted coconut oil or vegan butter and stir to combine. Set aside.
  • Add berries (fresh or frozen) to a pyrex or pie dish, add lemon juice and sprinkle cornstarch on top. Mix to combine.
  • Top the berry base with crumble, distributing evenly.
  • Cook at 375° for 35-40 minutes – you’ll want to see some light bubbling and for the crumble to turn golden. Enjoy as-is, with vegan whipped cream, or à la mode with some vegan vanilla ice cream!
